Easy Thai Green Curry

This simplified version of green curry chicken features summer-bright vegetables: yellow bell peppers and yellow tomatoes. But you can easily subsitute regular tomatoes and bell peppers. If you don't have a food processor, this green curry can also be made by mincing the ingredients and stirring them together - either way, it's a cinch to make, but tastes like you spent hours in the kitchen. An excellent curry chicken for everyday meals as well as a fabulous dish to serve company!
